For those that love the RV life, often cooking meals over a campfire is one of the joys (or necessities) that comes along with it. Whether you’re indulging in campfire cooking by choice, or you’re boondocking and resources are limited, we’ve rounded up a few of our favorite one pot camping recipes for those nights (and mornings) by the fire. If you haven’t invested in one already, we highly recommend getting a quality cast iron pan with a lid, or a dutch oven. Those tools are essential if you want to get serious about campfire cooking, and they’re used in all of the recipes we’ve collected here. You’ve surely tasted a version of these traditional dishes before, but there’s something special about whipping them up over the fire. Break out your skillet and get to cooking these popular dishes camping-style!

 

Skillet Pizza

Since your traditional pizza delivery isn’t exactly a feasible option when you’re RVing and it would just be asking too much to go without this classic, this skillet version is great to have. Homemade pizza is better anyway! Technically this is a stovetop recipe, but you can adapt it for the campfire version translating the different heat levels to varying closeness to the fire. This particular recipe is best for one or two campers. Customize the toppings however you like and you’ve got a great pizza night in the RV!

 

Skillet Cornbread

You don’t have to look hard to find a trendy restaurant that features a miniature skillet cornbread as a side. But why get dressed up and go out to an expensive dinner when you can cook a hearty homemade version on the campfire instead?! Serve it up next to a bowl of chili and you have the perfect cozy campfire meal.

Speaking of chili, we wouldn’t tell you to fix up some campfire chili without an accompanying recipe! You can portion out the spices ahead of time for quick and easy cooking. Fry up the meat first and then leave this recipe to simmer for a few hours while you enjoy the company around the campfire.

 

Campfire Nachos

If you want a camping snack that is completely customizable and will please everyone, cook up these campfire nachos. You’ll need to do a little pre-prepping ahead of time for this recipe, but if you throw your cooked chicken and chopped veggies in the cooler, you can easily pile them on top this delicious snack. You can really use whatever toppings you like, but this particular recipe calls for red pepper hummus, chicken and queso.

 

Camper’s Breakfast Hash

There’s nothing quite like waking up from a night of camping to get breakfast sizzling over the campfire. Try something different than your basic eggs and sausage with this cheesy breakfast hash.

 

Campfire Macaroni and Cheese

You’ll never eat boxed macaroni and cheese again after tasting this rich and savory macaroni and cheese. The pasta is cooked in milk, which reduces as it cooks and makes the dish taste extra indulgent.

Delicious pasta dishes with sauce from scratch are possible over a campfire! This no-boil spaghetti and meatball recipe proves it. It’s a great staple to have in your campfire meal repertoire, and it’s just as easy as it is tasty.

 

Toasted S’mores Dip

 S’mores. Everyone’s go-to campfire treat. You could go old-fashioned and poke a stick through a marshmallow and smoosh it between your graham cracker and chocolate, but this recipe will have you impressing friends around the fire by taking the traditional favorite and kicking it up a notch. It’s the same basic ingredients as normal s’mores, just melted together for the perfect ooey gooey consistency in your skillet.
