11 One Pot Camping Meals

We all love to camp and be outside around nature, but one of the most difficult components of planning a well thought out camping trip is creating a meal plan for as long as you’ll be out. For most dry campers or boondockers, there really aren’t too many options when it comes to cooking. Luckily, there’s always a solution!

Insert one pot meals here. One pot meals are one of the essentials in making a camping trip successful. They can be made in just a solitary pot or pan and still turn out delicious. Since you don’t have all the equipment you’re used to having in a full kitchen, (a microwave, four burner stove, oven or electric appliances) it’s crucial and essentially a requirement to become creative and think out of the box for your meals.

You have lots of options when it comes to choosing a vessel to cook said one pot meals in. Depending on your setup, you can use a Dutch oven, a cast iron skillet or a simple stainless-steel pot or pan. Anything will get the job done, really.

We’ve gathered a few one pot recipes that we thought our readers might like. Let us know if you have any favorites of your own!

Chickpea Hash

Recipe & Photo: Fresh Off The Grid

This is a great way to jump your day because chickpeas are full of protein. They’ll stick to your ribs a bit longer and you’ll have more energy for that hike you have planned! It’s also easily made into a vegan dish if you skip the eggs.

One Pot Beef Stroganoff

A great recipe to return to after a cold day, this Beef Stroganoff is a great option. And with it being so easy, who’s to say you won’t make this on a weeknight for you and your family?

Skillet Cornbread

Cornbread is the perfect addition to any bowl of chili and some soups, and this Skillet Cornbread recipe couldn’t be any easier.

Quick and Easy Campfire Apple Crisp

Photo & Recipe: Fresh off The Grid

Just because you’re out camping doesn’t mean dessert is of limits. Check out this awesome one pot recipe for apple crisp. What’s even better is that it only calls for ¼ cup of brown sugar!

Make Ahead Lentil Chili

Photo & Recipe: Today’s Parent

Remember that cornbread recipe from earlier? Here’s the perfect chili recipe to dunk a thick slice of that in. It’s vegetarian as well as a one pot meal, but you can probably add some ground beef if you want!

Shakshuka (pronounced shahk-SHOO-kah) is one of those dishes that has variations across different cultures: Mexico’s huevos rancheros, Italy’s eggs in purgatory, and Andalusia’s Huevos Flamenca are all dishes reminiscent to shakshuka. But throughout Northern Africa and much of the Middle East, shakshuka is king!, We suggest to mix the spices into one bag before you head out for camping trip to reduce prep time.

Hot S’mores Dip

Photo & Recipe: Spend With Pennies

I feel like this is an incredibly popular dish right now because it’s all over the internet, but I’m definitely not complaining! This simple Hot S’mores Dip is a twist on the classic S’mores sandwich. Though it does call for more than one pot, you can easily use only one by melting the chocolate in the same pot that you’ll melt the marshmallows in.

Pork Chop Hot Pot

Photo & Recipe: Active Kids

Once you try these pork chops, you’ll be reaching for this recipe each time you camp. This recipe is also the ticket if you ever find yourself craving a good southern meal.

Dan Dan Noodles

Photo & Recipe: Fresh Off The Grid

If you’re in the mood for something a bit different try these vegan Dan Dan Noodles! They’re so easy to make by just cooking the noodles then adding in the rest of the ingredients once the noodles are drained. Just be ready for the heat from the sriracha!

Campfire Chicken and Vegetable Stew

Photo & Recipe: One Red Teaspoon

Another great recipe to warm you up from inside out, this stew really packs a punch with its flavor elements. It uses pumpkin and fennel which are two ingredients you don’t typically see in American stews. Enjoy!

Spicy Sausage Scramble

Photo & Recipe: Trail Recipes

This recipe requires a bit of preparation before you leave home, but it’s definitely worth it. Just add your ingredients in an air-tight bag and pack everything else separately. When it’s time to cook, add everything to a pan and you’re all set. (Ghee is just clarified butter, so don’t be afraid to make this dish!)

Now that we have your mouth watering from all of these delicious one pot recipes, it is time to get out and get cooking!
